Camping Meal Prep
I may be dreaming of cozy sweaters, cooler weather, and changing leaves, but there is still a little bit of summer left. That means there is still time to squeeze in a last minute camping trip! We went camping in July with Sam’s whole family, and it was a blast. We prepared all of the food ahead of time, and we were so glad we did. Here are some of our favorite camping go-to’s that you can prep at home to make sure you eat delicious food all weekend without putting in a ton of work at the campsite!
Breakfast Burritos:
Combine your choice of veggies (I used zucchini, spinach, tomatoes, and peppers) with turkey bacon, eggs, cheese, and avocado
Add the mixture to some tortillas and lightly toast them
Wrap each burrito in foil
At the Campsite:
Throw the foil wrapped burritos on the grate over the fire or on a heated pan on your camping stove
The foil will heat up quickly, but that doesn’t mean the tacos are done. Make sure to check one of the tacos occasionally to make sure the tortilla doesn’t burn! It should be warm and lightly toasted
Fajita Bowls
Make some rice and beans and mix them together in a Tupperware bowl
Grill chicken breast, peppers, and onions and season with the fajita seasoning of your choice (I used a recipe from The Defined Dish, and it was fantastic)
At the Campsite:
Heat up the beans and chicken on separate pans until warm and serve. Spread the chicken out across a larger pan to decrease cook time
Bring along salsa, guacamole, chips, and tortillas
If you want to be a little extra, you can also bring limes, cilantro, and margarita fixings
Chorizo and Potatoes
Sauté diced potatoes, chorizo, and onions together. Once again, The Defined Dish has a great recipe for this in her cookbook under “Chorizo and Potato Taquitos.”
At the campsite:
Heat it all in a pan and serve in a bowl or wrapped in a tortilla
You could make this to eat as it’s own meal or with the fajitas like we did!
Extras:
We love bringing TONS of snacks to have while we are sitting around the campfire or on a hike. Here are some of our favorites:
Veggies and hummus (carrots, celery, cucumber, broccoli)
Chips, salsa, and guacamole
Crackers, cheese, and summer sausage
Mixed berries (strawberries, blueberries, raspberries, whatever you like!
Bananas or apples to pack for the afternoon
Larabars or Clif bars for some extra protein during a hike
With car camping, the food possibilities are endless! No more freeze dried meals (save those for the backpacking trips). You can keep it super simple, but still have delicious food throughout your trip. Happy camping!
